Ingredients
  • 1/2 cup chopped onion
  • 2 cloves garlic, minced
  • 1 ½ pound tofu frozen, thawed, sliced and pressed *1
  • 1 12-oz bottle Triple Crown BBQ Sauce* *2
  • 2-3 tbsp peanut butter chunky and organic *3
  • as needed refined coconut oil for sautéing
Servings:
Instructions
  1. Start the thawing and pressing process in advance*.
  2. Cut thawed, pressed tofu slices into ½” cubes.
  3. Melt 2 t coconut oil in wok (or other deep skillet) and sauté onion and garlic until translucent. Transfer to a bowl for further use.
  4. Add more coconut oil while wok is still hot and add cubed tofu. Stir fry until desired level of crispiness, stirring somewhat constantly. Add onion and garlic back in, toss until evenly distributed and then pour as much of the Triple Crown BBQ sauce as you like into the wok. Let simmer for 5-10 minutes until sauce is hot and worked its way into the tofu.
  5. For additional yummies: 1) You may want to marinate the tofu in the BBQ sauce for several hours before cooking. 2) If you want to add another dimension and drop the sweetness down a notch, try adding a 1-2 T peanut butter to the sauce before pouring it into the wok.
  6. Serving suggestion: 1) Serve over rice or other grains 2) Make a Sloppy BBQ by sandwiching it in a warmed, soft bun 3) Serve with a vinaigrette-coleslaw or other crunchy salad
Recipe Notes

*1 The 2nd secret (the 1st is of course the sauce) to making this awesome BBQ Tofu is to use tofu that has been frozen for more than overnight. Days or weeks might be best.

You REALLY want to press the water out of the tofu once it has been completely thawed. If you do it before it is completely thawed it is more likely to break or crumble. I actually press my tofu in an antique, cast-iron flower press. Seeing that these are not common household items, how might you press yours? Once you have sliced the thawed tofu into about ½ inch slices, lay the slices between two layers of terrycloth towel which are sandwiched between two cutting boards. You can press on the top cutting board for a while with all your might, or you could place a heavy object on the board and let it set a while. I leave my tofu in the flower press overnight.

*2 Triple Crown BBQ Sauce can be found in grocers and co-op through the Twin Cities and Metro area

*3 If you want to add another dimension and drop the sweetness down a notch, try adding a  the peanut butter to the sauce before pouring it into the wok.
