Ingredients
For the Salad
  • 2 cups arugula
  • 2 cups baby spinach
  • 2 cups parsley leaves only, no stems
  • 6 large green onions ends removed and finely chopped
  • 1 One 4” X 1” piece Daikon radish peeled and grated
  • 1/4 cup raw sunflower seeds dry roasted
For the Dressing
  • 3/4 cup fresh squeezed grapefruit juice about 1 large
  • 1/4 cup virgin olive oil
  • 2 tsp Dijon mustard
  • 1 tbsp minced ginger fresh
  • 1 1/2 tsp dried parsley
  • 1 pinch sea salt or to taste

Instructions
  1. Place all dressing ingredients in a jar, shake well and let set at room temperature for a few hours before serving.
  2. Toss arugula, spinach and parsley in a large salad (serving-sized) bowl. Top with chives, daikon and sunflower seeds.
