Ingredients
  • 1 cup pure maple syrup
  • 1 cup tahini
  • 1 1/2 teaspoon pure vanilla extract
  • 1 1/2 cup oat flour
  • 1 1/2 cup brown rice flour
  • 2 tablespoons ground flax seeds
  • 2 teaspoons baking soda
  • 1 teaspoon sea salt
  • 1 1/2 cup black quinoa if you can't find black, try red, or white if necessary
  • as needed coconut oil for greasing pan OR use parchment paper
Servings: 2" cookies
Instructions
  1. Preheat oven to 350 degrees
  2. Lightly grease cookie sheets, OR, line with parchment paper if you want to be completely oil free.
  3. Place maple syrup, tahini, and vanilla extract in a large mixing bowl and stir until well blended. Add soaked and rinsed quinoa and mix until well blended.
  4. Place all dry ingredients in a medium-sized mixing bowl and mix well. In 2-3 rounds, add dry ingredients to wet and mix just until well blended.
  5. Chill in refrigerator for ½ hour.
  6. Scoop by (packed) tablespoon onto greased OR lined cookie sheet. If the dough is very firm you can lightly flatten with small metal spatula. Bake for 15-20 minutes.
  7. Cool lightly before removing from cookie sheet.
