Nutty, creamy, rich and hearty – the flavors of toasted cashew, steamed and grated tempeh, combined with a tofu-mayonnaise offers up a deeply satisfying spread for all reason and seasons.
Ingredients
  • 4 oz tempeh* steamed 15 minutes
  • 1/2 cup cashews chopped
  • 1/2 cup Tofu Salad Dressing (below)
  • 2 tbsp soy sauce (or Bragg Liquid Aminos*)
TOFU SALAD DRESSING
  • 1 cup tofu (I prefer the Mori Nu. But regardless of brand, definitely go with a soft tofu)
  • 1/4 cup oil (not olive, safflower or anything real strong – canola is good)
  • 3 tbsp vinegar
  • 1 tsp honey preferably, of course, humane honey – small producer. I’ve had luck with rice syrup)
  • 1 tsp salt

Instructions
  1. Cool Tempeh, then grate on coarse side of grater. Toast chopped raw cashews at 350 degrees for 10 minutes or until lightly browned (you can also dry roast them in a skillet). Add all ingredients to tempeh with enough salad dressing to get a thick spread. Serve with Melba toast or crackers.
TOFU SALAD DRESSING
  1. Blend until smooth or creamy. For a thinner dressing add a little water or soymilk. Chill. (You don’t need to chill this to use in the above recipe.)
  2. Other Serving Suggestions: 1) Makes a great sandwich, alone or with tomatoes slices and a pickle. 2) Dollop a ½ cup scoop over a hearty green salad – you won’t need a dressing 3) Serve crostini and sliced veggies
Recipe Notes

* Tempeh is a highly nutritious, fermented soy product. It is versatile in its usage. It comes in several varieties (sea vegetable; flax; three grain) and can be purchased at most co-ops and health-food stores.

 

*Bragg Liquid Aminos is a Certified NON-GMO liquid protein concentrate, derived from healthy soybeans, that contains 16 Essential and Non-essential Amino Acids in naturally occurring amounts. It is a non-fermented option to soy sauce and tamari.
