Belly Warming Enchilada Bake

This recipe was inspired by a recipe from which my dear friend Joel was inspired – one of his favorite dishes. I tinkered with it so it delights you from the moment it touches your tongue to when it warmly lands in your belly. Layers of plant-based Mock Chicken, Sour Cream, Chedda Cheese Shreds, corn tortillas and a bit of heat from green chilies and jalapeños combine to create a Belly Warming Comfort Food.

Belly Warming Enchilada Bake

Ingredients
  • 2 lbs Mock Chicken
  • ½ c minced, green chilies
  • ½ c minced, pickled jalapenos
  • 1-2 tbsp refined coconut oil
  • 1 clove clove garlic, minced
  • 1 med white onion chopped
  • 1 8 oz pckg Daiya Cheddar Shreds
  • 1 12 oz container Tofutti Better Than Sour Cream
  • 3 tbsp Earth Balance Buttery Spread*
  • c whole wheat, unbleached flour
  • 3 cubes Rapunzel’s Vegan Vegetable Bouillon*
  • 3 c boiling water
  • ¾ c plain non-dairy milk unsweetened
Servings: 9 X 13 Pan
Instructions
  1. Preheat oven to 350 degrees. Grease a 9” X 13” baking dish.
  2. Place Rapunzel’s Vegan Vegetable Bouillon in medium mixing bowl and add boiling water. Cover with lid and set aside until further use. Once bouillon has softened, stir until completely dissolved.
  3. In medium skillet, sauté onion and garlic in coconut oil. Set aside for further use.
  4. In medium mixing bowl mix Daiya Cheddar Shreds and Tofutti Better Than Sour Cream. Set aside for further use.
  5. Rinse mock chicken and cut or tear into bite size pieces. Set aside for further use.
  6. In medium sauce pan melt Earth Balance Buttery Spread on medium heat. Gradually add flour whisking constantly. Immediately, and slowly, add dissolved Rapunzel’s Vegan Vegetable Bouillon and non-dairy milk, whisking constantly. Simmer until the mixture thickens, whisking often. Add Mock Chicken, green chilies, jalapeños, and sautéed onions and garlic. Season with salt to taste. Set aside for further use.
  7. Spread 1/3 of Mock Chicken mixture in the baking dish. Cover with 6 corn tortillas. Spread another 1/3 of Mock Chicken mixture over this. Cover with ½ the Tofutti Better Than Sour Cream , another 6 corn tortillas, the rest of the Mock Chicken mixture and the rest of the Tofutti Better Than Sour Cream.
  8. Bake in 350 degree oven for 20-25 minutes, until cheese melts, liquids start to bubble and the top browns lightly. Cool for 5-10 minutes before serving.
Recipe Notes

* Gluten Free Option: 1) Replace the Mock Chicken with ¾ of an (8 oz) package of Butler Soy Curls.  You will need an additional 20 minutes or so to soak the So Curls. 2) 5 Rice Tortillas – cut in half. Use brown rice flour.

*Daiya Shreds are delightful dairy-free option to add to any dish where you might use cheese. It is sold in co-ops and other natural-foods stores. It is free of soy and many common allergens. Daiya Shreds come in three styles: cheddar, mozzarella and pepperjack.

*Tofutti Better Than Sour Cream  A scrumptious plain soy sour cream that has no milk, no cholesterol, no lactose, not butterfat, no hydrogenated oil, and a marvelous taste. Note - there is also Tofutti Sour Supreme witch has partially hydrogenated soybean oil.
