Basmati Mushroom Juicy Lucy

Ingredients
  • 1 cup pecans finely chopped
  • 2 cups basmati rice cooked
  • 1/2 lb mushroom of your choic minced (about 3 cups)
  • 1 ½ cups diced white or yellow onions (about 1 large)
  • 1/2 cup oat flakes
  • 6 tbsp flaxseed* ground
  • 6 tbsp boiling water
  • 3 large cloves garlic minced
  • 1/4 cup tomato pat
Servings: Regular Sized Burgers or 16 Sliders
Instructions
  1. Dry sauté mushroom until most of the water has evaporated. Add coconut oil and sauté the onion and garlic until translucent. Remove from heat, add spices and let set in skillet until ready to use.
  2. In large mixing bowl add remaining ingredients, including the soaked flax seeds, and mix well. Add mushrooms, garlic and onion mixture and mix well again. If you have time, refrigerate before shaping into burgers.
  3. Take ½ c of grind and roll into ball in the palms of your hand. Take one piece (or some shreds) of Cheeze and push it into the ball of the grind. Shape grind around the Cheeze.
  4. Fry for 3-4 minutes on each side OR bake at 350 for 25-35 minutes (depending on size of burger).
Recipe Notes

1) You can use block Cheeze, Cheeze slices or shredded Cheeze. I find the shredded Cheeze to be the most difficult to work with. I like the Chao Cheese Slices from Field Roast the best.
2) These burgers actually freeze quite well.

* Flax Seeds - golden and brown, an ancient crop cultivated since Mesopotamian times, are a great source of omega-3 fatty acids, antioxidants, minerals and essential vitamins. They can be used as an egg replacer. Mix 1 T ground flaxseeds to 1-3 T hot water (depending on how well the seeds are ground) for one egg. Let sit for a few moments until it thickens.

* Bragg Liquid Aminos is a Certified NON-GMO liquid protein concentrate, derived from healthy soybeans, that contains 16 Essential and Non-essential Amino Acids in naturally occurring amounts. It is a non-fermented option to soy sauce and tamari.
