Ingredients
For the Pie
  • 1/2 cup almonds
  • 1/2 cup walnuts
  • 6-8 large Medjool dates
  • 1 med-large fresh ripe banana broken into 3-4 pieces
  • 5 med-large frozen ripe bananas broken into 3-4 pieces
For the Compote
  • 5 large Medjool dates
  • 1/4 cup coconut water OR filtered OR spring water
  • 1 1/2 pints fresh blueberries

Instructions
For the Pie
  1. Place almonds in a food processor and process to a course chop. Add walnuts and continue to process till somewhat fine grind. Slowly add dates, as needed, just until the mixture holds together when you press it. Press into an un-greased 8” pie shell and set aside for further use.
  2. Place the fresh banana in a high-speed blender, followed by the frozen bananas and purée until like soft-serve. NOTE: This will take a bit of time and you will have to use the damper quite aggressively. You will want to “pulse” a lot as to not burn-out or “pause” the motor.
  3. Pour banana Nice Cream in crust, spread out evenly and place in the freezer. Freeze for at least 60-90 minutes, or until the “degree of frozen” that you like.
For the Compote
  1. Place ½ pint of the blueberries in a small mixing bowl and mash with your hands.
  2. Place dates and water in high-speed blender and purée until smooth. Add remaining pint of blueberries and continue to purée until slightly chunky. Transfer to bowl with mashed blueberries and mix well. Refrigerate until ready to use.
