Ingredients
For the Brownie
  • 1 ½ cup flour unbleached all-purpose
  • 1 cup sugar unrefined*
  • 3/4 cup cocoa powder vegan
  • 3/4 cup oil safflower oil OR other low-flavor oil
  • 1 cup chocolate chips vegan - be sure they are your favorite
  • 6 tbls water filtered or spring
  • 2 tsp vanilla extract pure
  • 2 tsp ground flax seeds
  • 1 tsp baking powder
  • 1/2 t sea salt
  • 2 tsp EaEarth Balance Buttery Spread*
For the Ganache
  • 1/2 cup coconut milk canned, full-fat
  • 1/2 cup raspberries fresh or frozen (and thawed)
  • 1 1/2 cup vegan chocolate chips as this is where 50% of where the flavor comes from be sure to get your favorite

Instructions
For the Brownie
  1. Preheat oven to 350 degrees.
  2. Grease and flour an 8 X 8 inch baking dish. Set aside for further use.
  3. Place oil in a large mixing bowl. Add sugar and mix until well blended. Add water and vanilla extract and mix well again.
  4. Add remaining ingredients except chocolate chips. Mix just until well blended.
  5. Add chips and fold in until evenly distributed. Spoon batter into greased and floured baking dish and spread out evenly.
  6. Bake at 350 for 40 minutes or until toothpick comes out clean and sides start to pull away from pan.
  7. Place on cooling rack while you prepare the ganache.
For the Ganache
  1. Place chocolate chips in medium sized bowl.
  2. Add coconut milk and raspberries in small sauce pan. Puree with immersion blender.
  3. Heat until it boils for a just under a minute or so. (If you are not using an immersion blender puree the coconut milk and raspberries in a food processor or blender and transfer to sauce pan.) Be sure it is hot all the way through. (Note this is different from a ganache that does not use fruit. If you are only using cream you must pull it off as soon as it boils or it WILL spill over the pan.)
  4. Immediately transfer heated mixture to the bowl with the chocolate and mix well until the chocolate is completely melted and the mixture is homogenous.
  5. Let cool for approximately 10 minutes before using. If it gets too thick add just enough coconut milk to moisten to desired consistency.
  6. Ice the brownies with ganache. Let the icing set before cutting. Enjoy the decadence!!!
Recipe Notes

* Unrefined Sugar – sometimes called Turbinado or Cane  comes from the first pressing of the sugar cane. It has large crystals and retains some of the molasses flavor, which is a natural byproduct in the processing of white sugar. It can he interchanges in most recipes without drastically altering the integrity of the recipe. It isn't processed as much as white sugar, so it retains some trace minerals.
