AmyLeo is a cooking innovator. She develops and recreates a wide variety of vegan dishes ranging from raw to cooked featuring recipes that use no processed ingredients as well as recipes that focus on plant-based vegan meat and dairy replacements. These recipes are available through classes and parties.

Private Cooking Parties are similar to Private Cooking Classes. The main difference is that you invite your friends, family and colleagues to share in the fun. You will have so much fun that it won’t even feel like you are learning. As the host of your Private Cooking Party you select the recipes that you and your guest will most enjoy.

If private cooking classes or parties aren’t your style, AmyLeo also teaches classes at various venues in the twin cities area including Cooks of Crocus Hill, Kitchen Window, The Wedge Coop, The Seward Coop, Mississippi Market, Whole Foods and Valley Natural Foods. While these classes are not personalized to you specific needs you will learn many of the same principles covered in private classes.

Family-Style dining! Easy, delicious and nutritious. You’ll be dipping in for seconds for Avocado Salad with Lemon Basil Dressing, Pink-Salt & Balsamic Sugar-Snap Peas and Progressive Quiche Lorraine – all laid out family style like in the olden days. Oh, and don’t forget the desert, Vanilla- Chocolate Pudding Parfait.
The Joy of Legumes, Nuts and Seeds
The joy of cooking vegan the old-fashioned way. If you do not like the idea of using meat analogues (substitutes) or other processed proteins, you will love the versatility of legumes, nuts and seeds. Expand your knowledge and taste buds as we prepare and sample Ancient Grain Banana Fritters, Almond Nut Loaf, Split Pea Soup and Cashew Nut Mylk. Vegan from breakfast to dinner is delightful and nutritious.
It’s A Mock
In the mood for some protein “staying power’? While a well balanced, whole-foods, plant-based diet typically offers sufficient protein, once in a while we just want that protein-packed meal. While these dishes are made of Mock Meat there is no mocking the protein. Sink your teeth into: Mock Chicken Ala Queen over Black Forbidden Rice; Spinach Salad w/Seared Mock Duck drizzled with Reduced Balsamic-Lime Vinaigrette; Grilled Seitan & Asparagus Pink-Rice Pilaf.
A Rightful Return To Raw
Before the discovery of the use of controlled fire, we ate strictly raw. We have since learned to cook food in a myriad of ways. Now there is trend towards eating raw again as there are many benefits to this way of preparing food. This time around we enter the delectable world of gourmet. Join Chef AmyLeo as you prepare and sample these easy and satisfying dishes: Kale Chips, Rawvioli with Marinara Sauce, Zucchini Peanut Thai Noodles and Cashew Cream Tartlets.

From the Sweetest Tooth to the Salty & Savory Palate to anything in between you will delight friends and family with this selection of tasty delicacies. For the Sweet Ones in your life: White Chocolate Macadamia Nut Cookies make for a perfect light desert or cookie-jar favorite; for tea time, or dessert of course, Fig-Pumpkin Bread with Maple Cream Cheese Spread is sure to satisfy that desire for a wholesome treat. Now for the salty treats: Garlicky, Cracked-Pepper Cheesy Popcorn, coated in garlic-infused oil and rolled in rice-parmesan cheese and fresh ground black pepper, and finally Chedda-Cheese Delights – an incredible blend of crunchy texture, nutty flavor, and hint of chili.
